Ingredients
- 500g chicken, cut into bite-sized pieces
- 3 tablespoons sunflower oil
- 1 medium red bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 2 cups cabbage, sliced
- 2 tablespoons suya spice
- 1 tablespoon multipurpose seasoning
- 1 brown onion, sliced
- 2 cloves garlic, chopped
- 2 stock cubes
- Salt to taste
Steps to Follow
- Step 1: Season chicken with salt, 1 stock cube and suya spice. Marinate for 10-60 minutes (can marinate up to 2 hours if preparing ahead)
- Step 2: Heat 2 tablespoons oil in a wok and cook chicken for 5-10 minutes until done
- Step 3: Add onions and stir-fry for 2 minutes
- Step 4: Add bell peppers and cook for 2 minutes
- Step 5: Add cabbage, multipurpose seasoning and remaining stock cube
- Step 6: Toss and stir-fry for 5 minutes
- Step 7: Taste and adjust seasoning as needed
- Step 8: Cook for final 3-5 minutes before removing from heat
