Ingredients

  • 1 cup mixed bell peppers (red, yellow, green)
  • 1 large onion, chopped
  • 1 cup diced and fried liver
  • 150g prawns (optional)
  • 2 cups chicken broth
  • 2 stock cubes
  • 1 tablespoon dried thyme
  • 1 tablespoon curry powder
  • â…“ cup vegetable or sunflower oil
  • Salt to taste

Steps to Follow

  • Step 1: Wash rice thoroughly with warm water until water runs clear. Drain and set aside.
  • Step 2: Heat 1 tablespoon oil in a pot and stir-fry rice for 1-2 minutes.
  • Step 3: Add half the stock cubes, thyme, and chopped onions. Stir for another minute.
  • Step 4: Pour in chicken broth and water. Cover tightly and cook on low heat for 30 minutes.
  • Step 5: In a separate pan, heat remaining oil and fry peppers, onions, and mixed vegetables.
  • Step 6: Add remaining stock cubes, curry powder, and salt to the vegetables.
  • Step 7: Add fried liver and prawns to vegetable mixture.
  • Step 8: Once rice is cooked, combine with vegetable mixture and mix thoroughly.
  • Step 9: Steam combined mixture for 5 minutes, then remove from heat.
