Ingredients
- 1½ cups black-eyed peas or honey beans, dried
- 1 medium red bell pepper, chopped
- 1 habanero pepper (scotch bonnet)
- ¾ cup onion, diced
- 2 tablespoons ground crayfish
- ¼ cup vegetable oil
- 2 bouillon cubes
- ¾ cup cooked fish, minced
- 3 eggs, hard-boiled
- 1 inch fresh ginger

- Step 2: Peel beans using a food processor by pulsing briefly 3-4 times
- Step 3: Wash peeled beans and remove floating skins

- Step 5: Mix in oil, crayfish, bouillon cubes, and salt
- Step 6: Grease moi moi containers (ramekins or foil pans)
- Step 7: Pour mixture into containers and add boiled eggs
- Step 8: Steam in a large pot for 45-60 minutes
- Step 9: Test doneness with a toothpick – it should come out clean
