Ingredients
- 3 cups rice
- 2 cups beans
- 700ml fresh tomatoes
- 3 tablespoons canned tomato paste
- 3 seasoning cubes
- 1 cup sliced onions
- 1 kg chicken
- 1 teaspoon powdered ginger
- 1 teaspoon powdered garlic
- 500ml vegetable oil
- 5 scotch bonnet peppers
- Salt to taste
- Prep time: 40 minutes

Steps to Follow
- Step 1: Parboil rice in boiling water for 2 minutes, then wash and set aside
- Step 2: Pick through beans, parboil, wash, and set aside separately
- Step 3: Blend fresh tomatoes with scotch bonnet peppers until smooth
- Step 4: Cook chicken with half the onions, 2 seasoning cubes, and salt for 10-15 minutes. Remove chicken and reserve stock
- Step 5: Fry or grill the chicken until golden brown
- Step 6: Cook the parboiled beans with water and some sliced onions for 30-40 minutes until 60% done
- Step 7: Heat 250ml oil in a large pot, fry remaining onions for 1 minute
- Step 8: Add blended tomato mixture and tomato paste, fry for 15-20 minutes until thickened
- Step 9: Remove half the fried tomato mixture and set aside
- Step 10: Add chicken stock, 2 cups water, remaining seasoning cube, spices, and salt
- Step 11: Add parboiled beans and rice, stir well
- Step 12: Top with reserved tomato mixture and remaining onions
- Step 13: Cover and cook on medium heat for 25-40 minutes until rice and beans are tender
- Step 14: Stir everything together before serving
Additional Instructions
- Serve hot with the fried chicken
