Ingredients
- 750g chicken (breast, thigh, or drumstick)
- 4 tablespoons Caribbean curry powder
- 1 medium onion
- 2 scotch bonnets, chopped
- 1 tablespoon fresh thyme
- 2 stock cubes
- 2 cloves garlic, chopped
- 1 potato, peeled and cut
- 1 carrot, cut (optional)
- 1 cooking spoon vegetable or sunflower oil
- Salt to taste
Steps to Follow
- Step 1: Wash chicken and marinate with 2 tablespoons curry powder, scotch bonnets, garlic, stock cube, thyme, and salt. Refrigerate for 2-6 hours or overnight.
- Step 2: Heat oil in a pot over medium heat. Add remaining curry powder and stir for 1-2 minutes until color changes.
- Step 3: Add marinated chicken and brown all sides carefully.
- Step 4: Add 2 cups of water, stir, and cover pot.
- Step 5: Cook on low heat for 30 minutes.
- Step 6: Check chicken tenderness. Add more water if needed and continue cooking until tender.
- Step 7: Add potatoes and carrots (if using) to thicken sauce.
- Step 8: Simmer for 10 more minutes.
- Step 9: Remove from heat and serve hot.
