Ingredients

  • 750g chicken (breast, thigh, or drumstick)
  • 4 tablespoons Caribbean curry powder
  • 1 medium onion
  • 2 scotch bonnets, chopped
  • 1 tablespoon fresh thyme
  • 2 stock cubes
  • 2 cloves garlic, chopped
  • 1 potato, peeled and cut
  • 1 carrot, cut (optional)
  • 1 cooking spoon vegetable or sunflower oil
  • Salt to taste

Steps to Follow

  • Step 1: Wash chicken and marinate with 2 tablespoons curry powder, scotch bonnets, garlic, stock cube, thyme, and salt. Refrigerate for 2-6 hours or overnight.
  • Step 2: Heat oil in a pot over medium heat. Add remaining curry powder and stir for 1-2 minutes until color changes.
  • Step 3: Add marinated chicken and brown all sides carefully.
  • Step 4: Add 2 cups of water, stir, and cover pot.
  • Step 5: Cook on low heat for 30 minutes.
  • Step 6: Check chicken tenderness. Add more water if needed and continue cooking until tender.
  • Step 7: Add potatoes and carrots (if using) to thicken sauce.
  • Step 8: Simmer for 10 more minutes.
  • Step 9: Remove from heat and serve hot.
